The 2022 Pino was produced with the Bobal grapes from one hectare of 40-year-old vines on limestone soils. With the idea to achieve a more serious age-worthy red, it fermented in 4,500-liter oak vats and matured in a 3,500-liter oval oak foudre. It has 13.5% alcohol and good acidity and freshness with the usual parameters for the grape (pH 3.57 and 5.7 grams of acidity). This was the more reductive of the 2022s that I tasted; the wine is more austere and feels a bit more rustic in the palate, but it was bottled only two months before I tasted it. 4,000 bottles were filled in August 2023.

The Pino wine, produced by Bodegas y Viñedos Ponce, is a single varietal red wine made from 100% Bobal grapes. It comes from a single plot called Pino, which covers one hectare of calcareous soils. This wine stands out for its origin in the D.O. Manchuela, a region known for its continental climate with Mediterranean influences.

Winemaking

The winemaking of Pino begins with a manual harvest, followed by fermentation with indigenous yeasts in 4,500 litre open French oak vats. This artisanal process reflects the winery's dedication and quest for quality. The wine is aged for 11 months in 600-litre French oak barrels, which contributes to its complexity and structure.

Taste

Pino is characterised by being a tasty, intense and velvety wine. It presents marked tannins and a well-balanced acidity, with hints of earth. Its colour is a very intense dark red with violet reflections. The nose is dominated by the presence of black fruit, complemented by creamy, balsamic notes and a hint of liquorice. In the mouth, the palate is vibrant, providing great length and a savoury, almost saline finish. This flavour profile makes it an excellent accompaniment to red meats, game, white meats and pulses.
Pino is a wine with a long ageing capacity, which allows it to be enjoyed for the next ten years if kept in optimal conditions. This aspect, together with its careful winemaking and distinctive flavour profile, makes it an exceptional choice for wine lovers.
