Description
Billecart-Salmon Brut Réserve is a champagne made from 40% Pinot Meunier, 30% Chardonnay and 30% Pinot Noir by the Billecart-Salmon winery in the Champagne region of France.
This is a champagne made from three of the best vines from the best vineyards. The Pinot noir grapes come from vineyards grown in the Montagne de Reims and the Marne Valley.
The Chardonnay grape also comes from the Marne, as does the Pinot Meunier, which comes, in addition to the valley, from the southern slopes of Épernay.
Winemaking
The grapes are harvested by hand. The winemaking is traditional, the vinification process is done in vats with malolactic fermentation and the use of between 50 and 60% of reserve wines. The dosage is moderate with 8 grams of sugar per litre.
It is a champagne that rests for a minimum of 30 months in the marvellous underground cellars with 17th century walls.
Taste
Billecart-Salmon Brut Réserve is a subtle champagne with floral and fruity aromas. It is distinguished by the finesse of its slowly rising bubbles and its abundant and persistent mousse.
On the palate it is frank, precise and fresh, combining harmony and balance. Its flavours and aromas are the expression of its ageing in traditional cellars.

Billecart-Salmon Brut Réserve has been produced at the Billecart-Salmon winery by the seventh generation of a family, embodied in the figure of Mathieu Roland-Billecart, who runs it.
A subtle and ethereal champagne that combines harmony and balance, it is elegant and versatile, perfect for any occasion!
On a gastronomic level this champagne is perfect as an aperitif and to accompany both the simplest and the most elaborate dishes. It is essentially recommended as an accompaniment to oysters, seafood, fish, risottos and pasta, among others.
