Description

Oremus Tokaji Aszú 3 Puttonyos represents the greatness and tradition of a family of exceptional wines. Aszú wines are the differential element of this family, fusing tradition, innovation and excellence. Each bottle is the testimony of an ancestral know-how, with deep roots in a unique and unrepeatable land. To obtain the precious Oremus Tokaji Aszú 3 Puttonyos wine, the indigenous varieties Furmint, Hárslevelü, Zéta and Sárgauskotály are used in the 90 hectares of vineyards with an average age of 20 years at 200 metres above sea level.

Winemaking

Aszú, also known as tear wine, is a meticulous process that requires patience and in-depth knowledge. It is only feasible in good vintages, when nature provides rain in late summer and a sunny and windy period in early autumn. These conditions are essential for the formation of the noble berries. The berries, swollen by the humidity, crack and the"Botrytis cinerea" establishes itself on their skin, giving rise to noble rot.
Following formulas that have remained unchanged for centuries, three 23 kg cuévanos (Hungarian: 'puttony') of Aszú noble ber ries are added to the must contained in a 'de Gönc' cask (equivalent to 136 litres). After mashing the Aszú noble berries with the must, the grapes are left to swell for a day or two and then pressed. Fermentation of these musts is a slow process that can take up to two months. Once in wooden barrels, the fermentation is left to complete naturally. Eszencia, collected drop by drop from the Aszú berries, is then added, symbolically restoring its soul.
Ageing takes place in small wooden barrels, specifically in 136-litre "Gönc" and 220-litre " Szerednye" barrels, made of oak from the mountains that border the wine-growing region. This ageing takes place in underground cellars dug into volcanic soil, where the wine matures for 2 to 3 years in conditions of constant temperature and humidity. After bottling, the wine matures for an additional year in the bottle, beginning a journey of development that can last for decades.
