Description
The producers of Dominio del Bendito have sought to offer a different version of Tinta de Toro with more structure, without losing subtlety and elegance and avoiding excessive power. The result is a wine with a more complex aroma and a more subtle balance of fruit.
Winemaking
Dominio del Bendito Las Sabias is a wine made with Tinta de Toro grapes from hand-selected vines that are more than 45 years old. It is vinified in concrete vats and epoxy resin and matured for 16 months in French oak barrels.
The filtration process is carried out at low pressure and bottling is done in a single batch. The production of this wine combines modern technology with the winery's traditional way of making wine, achieving a wine with a marked character and an intense fruitiness.
Taste
This wine is a real delight for the senses. When you taste it, you immediately notice its ripe and concentrated fruit flavour, which gives it a unique intensity and depth of flavour. In addition, the noble and ripe tannins are perfectly integrated into the wine, giving it a solid and harmonious structure.
The other side of the best of Tinta de Toro
Dominio del Bendito is a young project in the Toro Denomination of Origin that focuses on expressing the character of a region with pebbly and sandy soils at 700 metres altitude in a semi-arid climate.
The flavour and structure of this wine make it an excellent choice to accompany meat dishes, especially roast suckling pig, big and small game, and red meats in general. For these reasons, it is considered an excellent pairing.
