Tasted at the Disznóko vertical in London, the 2013 Tokaji Aszu 5 Puttonyos is an (Aszú) blend of 75% Furmint, 15% Zéta and 10% Hárslevelu that was picked between September 23 and November 11 over four passages through the vineyard. It has an elegant, laid-back, almost Sauternes-like bouquet, nicely defined if not quite as complex as other vintages. The palate is crisp and fresh, a dash of stem of ginger on the entry, creamy in texture with the Azsu character more dominant here than on the nose. There is a lovely touch of mandarin and orange rind that comes through with aeration and enhances this young Tokaji that is full of potential. It just needs a little more persistence, but the focus and intensity are superb. Tasted September 2016.

Description

Disznókö Tokaji Aszú 5 Puttonyos is a wine that represents the essence and winemaking tradition of the Tokaj region in Hungary. This wine is made from meticulously selected grapes, which have been affected by noble rot, resulting in extremely concentrated and rich aszú berries. The grape varieties used are 100% Furmint for the aszú berries and a combination of 50% Furmint and 50% Hárslevelű for the base wines.

Winemaking

It all starts with the storage of the aszú berries, which are harvested from September to the end of October and kept in vats until the end of the harvest. The Eszencia, an elixir produced from these berries, is then harvested and added to the Aszú wines at the end of fermentation. To extract the sugars, flavours and acids from the berries, a skin contact process is used, immersing the berries in fermented must or new wine. The berries are then slowly pressed to extract all the juice. The resulting wine is aged for approximately two years in oak barrels in the depths of the Disznókö cellars. Finally, after this ageing period, the winemaking team comes together to blend and select the best blends, resulting in the distinctive Disznókö Tokaji Aszú 5 Puttonyos.

Taste

Disznókö Tokaji Aszú 5 Puttonyos has a light golden colour. The nose is fruity with notes of ripe apricot, peach, mango and acacia honey. On the palate, it is very rich, with opulence, but also freshness and a great structure.
This wine is perfect to enjoy on its own, as a refreshing aperitif or with canapés, pâtés and foie gras. It is also excellent with dishes such as poultry, white meats with creamy sauces or seafood risotto. With significant ageing potential, it is best served chilled (11-13°C). Once opened, it retains its freshness for at least a week in the refrigerator.
