The young, sweet unoaked 2017 Pedro Ximénez Casa del Inca matured in concrete vats that are traditional in the region. The wine wants to show the character of the sun-dried fruit and was fortified gradually until it reached the final percentage of 15% alcohol and some 420 grams of residual sugar. It's very sweet and young with low to moderate acidity. I found it a little too sweet for my taste. 3,000 bottles.
